A Cheater's Guide to Berry Coffee Cake / The Sweet Escape Recipe Yes, I enjoy cooking and baking. Oh yeah, and eating. That’s probably my favourite. But I also have nothing against shortcuts in the kitchen. Sometimes you want to take your sweet time pouring yourself into a dish and sometimes you don’t. For those times when you need something quick but delicious think about this cake. What’s so great about this cake is that it’s kinda a blank canvas and you can customize it with whatever fruit and toppings depending on what you like or what’s in season. It’s the perfect cake for afternoon coffee or tea to share with friends. Keep reading to see how to be a big cheat in the kitchen and make this simple cake.

So the big cheating portion of this cake is that you use a boxed vanilla (or butter peacan) cake mix as the base. Follow the directions to whip up a batter then add your favourite fresh fruits & make a crumble topping.

I added about 1-2 cups mix of blueberries & blackerries. Spread them evenly in your baking ban. I recommend using a large rectangle pan rather than a bunt pan just because the fruit can be distributed more easily. Keep in mind that the fruit will sink to the bottom so the top will become the bottom.

This is optional but if you want a little extra something (aka customize and hide your cheating ways) and make it more like a coffee cake you can make some crumble topping. Here’e the recipe I used:

Coffee Cake Cinnamon Crumble Topping: 

  • 1/2 cup brown sugar
  • 1/4 cup sifted all-purpose flour (sift before measuring)
  • 1/4 cup butter, room temperature
  • 1 teaspoon cinnamon

Bake according to the instructions on the box until it’s beautiful and golden like this.

When it’s cooled enough, turn it upside down on a cooling rack to see all the delicious berry goodness.

Then sprinkle with some icing sugar to make it look all pretty just before serving it up to your guests. Cheating can be good sometimes. Delicious actually.
