Canadians aren’t exactly known for our over the top patriotism. But when there’s a reason to proud, we’re there waving our flags. You could say Canada Day is a great day to celebrate being Canadian. What are you up to? I’ll be celebrating with a patio BBQ party but of course and I’ll be showing my true patriot by sipping on some of this ice-cold strawberry coconut margarita recipe. And for my American friends who will be celebrating July 4 in a few days, you can easily ‘americanize’ them with a few delicious blueberries.
STRAWBERRY COCONUT MARGARITA
• 1 can of coconut milk, full fat
• 2 cups frozen strawberries pureed + some for garnish
• blueberries for garnish
• 1/4 cup fresh lime juice + some for salt rim
• 1/2 cup white tequila
• salt or sugar for rim
• ice
* makes 2 servings
For the strawberry red portion – add together strawberries, half of the lime juice and tequila in a blender with ice and pulse until it’s smooth. Add ice if necessary to get the slushy texture. Repeat the same steps with the coconut milk. Leave out the tequila if you want to make them virgin.
Run a fresh lime wedge around the rim of the glasses then dip in a shallow dish of salt or sugar. Stick your straw through a fresh strawberry for some extra fun garnish. Cheers!
